Nattokinase is an enzyme that is produced by Bacillus subtilis during the preparation of the traditional Japanese dish, natt ō , from which the name of the enzyme comes. Nattō , known for its strong "cheesy" smell and sticky texture, is made by adding the bacterium Bacillus subtilis to boiled soybeans and allowing it to ferment. The only source of nattokinase is nattō and it can only be produced using this specific fermentation process. The enzyme itself is credited with a thrombolytic effect , i.e. preventing the formation of blood clots . This action results from three properties of this nattokinase: direct fibrin breakdown, activation of substances that promote their degradation and inactivation of substances that inhibit their destruction.
